High-Protein Apple Pie Overnight Oats

These High-Protein Apple Pie Overnight Oats are a perfect make-ahead breakfast for the fall season! The oats for a creamy base that is topped with a healthy 3-ingredient apple topping that gives the flavor of apple pie but in the form of a healthy breakfast.

Ingredients
  

Apple Topping

  • ½ Apple, chopped
  • 1 Tbsp Maple Syrup
  • Cinnamon start with ¼ tsp, and adjust from there.

Oats

  • cup Old-Fashioned Oats
  • ¼ cup Vanilla Greek Yogurt
  • ½ scoop Vanilla Whey Protein Powder If you do not want to add protein powder, just increase the amount of oats to ½ cup.
  • 1 Tbsp Ground Flax Seed
  • 1 Tbsp Chia Seeds
  • ½ tsp Cinnamon Once again, start with ¼ tsp and adjust
  • 1 Tbsp Chopped Pecans
  • ½ cup Water

Instructions
 

Make the Apple Topping

  • Chop ½ an apple into small cubes and place in a saucepan over low-medium heat.
  • Add cinnamon, maple syrup, and a splash or two of water. Cover with a lid and cook until apples begin to soften, around 6 minutes.
  • Uncover and cook until most of the water evaporates. Remove from heat and let cool.

Make the Overnight Oats

  • In a small jar, combine all ingredients. Let set for 5 minutes until chia seeds have soaked up a bit of fluid.
  • Top with apple topping, cover, and store in the fridge overnight or at least 12 hours. Take out when you are ready to eat and enjoy!
