High-Protein Apple Pie Overnight Oats
These High-Protein Overnight Oats taste like fall, just in time for the cozy season! The creamy base is topped with cooked apples, and it makes this recipe taste like dessert for breakfast.
I kind of stumbled upon this recipe by mistake. My husband and I are trying to eat healthier. So, I wanted to prep a breakfast that was easy, tasty, and packed in a lot of nutrients. I first made this recipe back in June with peaches (also amazing). But, as the seasons change, peaches just don’t have the same flavor now, hence the apples.
I started to throw ingredients together to make a nutrition-packed breakfast. I started with the oast, then added ground flax seeds and chia seeds for some extra fiber. The yogurt was a new addition for me with overnight oats. In my previous recipe for Blueberry Overnight Oats, I talked about how I didn’t like the flavor of greek yogurt in overnight oats. I figured out it was because I was adding PLAIN nonfat greek yogurt. If you can handle that flavor, good for you. But I have to use Vanilla greek yogurt. I think it adds a nice creamy texture and a good vanilla flavor.
Finally, I needed to pick a fruit to go on top. For some reason, I was craving baked apples, SO I decided what better way to satisfy this craving then by making them for breakfast! Once I put it all together, it reminded me of apple pie.
How To Make Apple Pie Overnight Oats
The first step is making the apple topping, and it could not be more simple. Start by cutting up half an apple into small cubes.
Then, place the apple, maple syrup, cinnamon, and small amount of water into a saucepan over medium-low heat. The water here helps steam cook the apples and prevent them from sticking.
Cover and let them cook for around 6 minutes or until soft. Then cook uncovered for another 3-4 minutes until most of the water is dissolved. I like to stop the cooking before all of the liquid is gone as it makes an apple “sauce” if you will.
Making the Oats
I know I said the apple topping was easy, but this part is easier.
Just put all of the ingredients in a jar, mix, and your done. Simple.
You can just top it with the apples, stick it in the fridge, and be done. I usually let them set for 5 minutes so the chia seeds absorb some of the liquid. That way when I put my apple in, they don’t sink to the bottom. That is more of an aesthetic thing, it won’t affect the flavor is you skip this step.
Substitutions:
Oats– I use old-fashioned oats, but you can use quick oats as well.
Apples – Like I said, I have done the same recipe with peaches and it was amazing. Feel free to experiment with different apples, peaches, plums, or even pears.
Protein Powder – You can skip this part if you don’t like protein powder. I like how it keeps me full for a lot longer and adds a boost of protein to my morning. You can also use any brand you’d like. I personally use Gold Standard Vanilla Whey Protein.
Yogurt: I use vanilla nonfat greek yogurt, but any yogurt you like could work. You can use other kinds of greek yogurt or your favorite non-dairy yogurt.

- Answer – Absolutely! This is actually a part of my weekly meal prep. I always prep four at a time, and they store super well in the fridge.

Question 2: How can I make it more budget friendly?
- Answer – To make this more budget friendly, skip on the special ingredients. I love the flavor with the chia seeds and ground flax seed, but if you want to save money, skip them both or just one. Same with the protein powder, you can skip it and just add more yogurt. If you omit these ingredients, I would bring the oats from 1/3 of a cup to 1/2. That way you can make sure to get enough calories. Without these, you will still have a yummy breakfast that won’t be as expensive.

Ingredients
Apple Topping
- ½ Apple, chopped
- 1 Tbsp Maple Syrup
- Cinnamon start with ¼ tsp, and adjust from there.
Oats
- ⅓ cup Old-Fashioned Oats
- ¼ cup Vanilla Greek Yogurt
- ½ scoop Vanilla Whey Protein Powder If you do not want to add protein powder, just increase the amount of oats to ½ cup.
- 1 Tbsp Ground Flax Seed
- 1 Tbsp Chia Seeds
- ½ tsp Cinnamon Once again, start with ¼ tsp and adjust
- 1 Tbsp Chopped Pecans
- ½ cup Water
Instructions
Make the Apple Topping
- Chop ½ an apple into small cubes and place in a saucepan over low-medium heat.
- Add cinnamon, maple syrup, and a splash or two of water. Cover with a lid and cook until apples begin to soften, around 6 minutes.
- Uncover and cook until most of the water evaporates. Remove from heat and let cool.
Make the Overnight Oats
- In a small jar, combine all ingredients. Let set for 5 minutes until chia seeds have soaked up a bit of fluid.
- Top with apple topping, cover, and store in the fridge overnight or at least 12 hours. Take out when you are ready to eat and enjoy!
